Question: It’s that times of year when a lot of us that focus on a healthy diet program become concerned what can we do?
Answer: It is almost time; the holidays are right around the corner! Most people today worry about what they are going to eat for the holidays. Many of us will most likely purchase or make some type of holiday food to take to a celebration. As most of us know this can be stressful worrying about the fat and calories in pies and other desserts. Please understand there are several healthy ways of handling this holiday stress. One thing is to have the freedom of choosing foods and even desserts no matter what kind of diet program you may be on. Remember stay focused on healthy foods, education, movement, and motivation. Regarding healthy foods, I have included one of our most popular and delicious pumpkin desserts for you to try this holiday season. Pumpkin Custard 2 egg whites ¾ cups evaporated skim milk 1 cup canned pumpkin ½ tsp. ground cinnamon 1/8 tsp. ground allspice 2 tsp. brown sugar twin 1/8 tsp. ground ginger Dash light salt In a medium mixing bowl, beat eggswhites till foamy. Stir in pumpkin, milk brown sugar, cinnamon, allspice, ginger and salt. Place 4 (6 ounce) custard cups in a shallow baking dish. Pour pumpkin mixture in cups. Place the baking dish containing the cups on a wire rack. Pour boiling water around cups in dish to a depth of 1 inch. Bake in a 325 degree oven for 35-40 minutes or until a knife inserted near the center comes out clean. Remove custard cups from water. Serve warm or chilled with low-fat whipped topping.
