Best foods for tailgating
Q: I was wondering if you had any tailgating food ideas. I am not just talking about burgers, chips and dip. What I need are some tailgating ideas worthy of competition. They don’t have to be complex, just so good that the guys in the truck next to us will be wishing they were part of our crew!
A: I hear you! Nothing like great food and some tailgate competition. One of the best things about tailgating is that it takes grill food to a new level. There are tons of ideas on sprucing up old favorites, so I will start by sharing some of the best things that I’ve heard. I enjoy a dog hot off the coals as much as the next guy, but I have a dog that is truly worthy of the grill, and a brew. One of the best dogs I’ve ever had is the grilled beer-dog. First, start with a bit of prep. Take a top quality dog and throw it into a crock-pot and cover with a darker, but not dark, beer. Let it warm on low heat for an hour or so as it soaks up the beer. Package them up and finish cooking on the grill. When you are done, you have one great dog worthy of the grill. The sausage and pepper hero is another perfect for portable grilling menu item. Not only is it utensil free eating, it is a real winner with hungry tailgaters. Start with some olive oil, a healthy amount of cut bell peppers and onions (totaling about a pound per 6 sausages), 2 cloves of thinly sliced cloves, crushed red pepper and crumbled dried oregano. Then you’ll need some sausages, about 5 ounces each, and some hero rolls. Heat up a non-stick griddle or pan on the grill and throw in everything but the sausages and cook until tender. You can set that aside when doe and cook the sausages. When the sausages are done, split the rolls and brush insides with oil and toast on the grill. Assemble the sandwich and you’ve got something work talking about. Next month, I’ll share some more ideas that will light up your grill and your tailgating parties with flavor.
