Simple but delicious treats...part 3
Q: Do you have any suggestions for easy candies I can make for hostess/party gifts or that the kids can make too?
A: Staying on the theme of my last Q&A, I will continue with more holiday treats. Can any of us really have too many holiday recipes? I think not! These are both very simple recipes and can get the whole family involved. I’m on a bit of a peanut butter theme lately, so enjoy! Oreo and Peanut Butter Brownie Cakes 1 box brownie mix, or basic scratch recipe (enough to make an 8x8” pan of brownies) 24 Oreo Cookies 1/2 cup creamy peanut butter Preheat oven to 350 degrees and line a 12 muffin cup baker with paper liners. Prepare brownie mix according to package directions. For each cupcake cup spread 1 teaspoon of peanut butter over 2 Oreo cookies and stack them on top of each other. Place oreo stacks into the cupcake lined muffin cups. Spoon 2 tablespoons of brownie batter over each stacked oreos and let it run down the sides of the cookies. If you have left over brownie batter, bake separately in a separate baker or muffin tin. Bake cookies and brownies for 18 to 20 minutes, until brownies are cooked through. Let cool completely then serve. Makes about 12. Peanut Butter Pretzel Bites 1 cup creamy peanut butter 2 tbsp softened butter 1/2 cup powdered sugar (maybe more) 3/4 cup brown sugar (maybe more) Pretzels 1 bag of melting chocolate wafers Combine peanut butter and softened butter in a large bowl with a fork or whisk, or in a stand mixer. Add the sugars and mix to combine. At this point if the filling will roll easily into balls without sticking to your hands you’re ready to go. If not, add a little more of each sugar until you reach a consistency that is easy to roll (I used about 3/4 cup of each sugar). Use a teaspoon measure to scoop the filling. Roll each portion into a small ball, then sandwich them between two whole pretzels. When all the balls are rolled and successfully sandwiched, stick the whole tray in the freezer for about half an hour. Pour the chocolate wafers into a microwave safe bowl and heat at 30-second intervals on medium heat, stirring occasionally until completely melted. Remove the pretzel sandwiches from the freezer and quickly dip each half-way into the melted chocolate. Return to the tray and repeat with remaining sandwiches. When all are dipped, return the tray to the freezer to set up completely. Store the sandwiches in the refrigerator until serving time. Make some creative containers and you are set up with some very yummy and inexpensive holiday gifts that anyone will enjoy!
