Menu ideas for guys
Q: I am having a group of guys over for a party in my newly completed game room/bar and am planning to barbecue. It is the first time we will all have seen each other since high school so I want to do something more than burgers but not something that will have me tied up at the grill too long and of course something a bunch of middle aged guys enjoy. Can you give me a few options?
A: As long as you have meat on the menu, you’ll do all right! In fact, in most cases it never even occurs to most men that meat is just part of an entire menu that includes a salad and side dish. No matter what else you plan to serve, meat will be the star of the meal. (Bonus points if you killed it yourself.) So when you choose your main course, think about what you like and chances are they will enjoy it as well, whether it is a big juicy grilled turkey leg or some mouth watering pork chops seasoned to perfection. A surf and turf meal is another good option, on the off chance one of your old pals is not a meat eater. Try a tender top sirloin and tuna or halibut. These choices all require minimal cooking time and deliver high flavor. Another option is to consider something you can begin cooking ahead of time, in a smoker for example and have ready when the guys arrive. Try turkey legs or ribs topped off with your favorite sauce. If you plan to smoke your meat, be sure not to use too much smoke. Too much smoke can make your meat bitter or taste like an ash tray. A good rule of thumb: between two and three ounces of wood is usually sufficient, regardless of the cut or weight. Remember to invite your guests over for the entire smoking portion or the last hour or so before it is done. You know how we guys like to sample it straight from the smoker while catching up on old times with our favorite “beverage”... Lastly, consider portions. Save portion control for some other time. Nothing says “man meal” better that a huge platter of steaks right off the grill.
