What are some end of season barbecue ideas?
Q- I love grilling and want to go out with a bang before it is time to cover the grill for the season. Can you give me some ideas that are a little out of the ordinary but still things the whole family would like?
A- Even though summer is over, it is no reason to pack away the grill—at least not yet. We have plenty of grill worth weather and recipes yet to go. I am a huge fan of grilling for many reasons and one of those reasons is that it makes even healthy foods seem like forbidden treats. Another reason is that it is an easy way to take low cost ingredients and make something truly special. These two recipes combine the best of these qualities for a meal that you can feel great serving to the family. Sweet and Savory Chicken (Serves 4) Ingredients 2 teaspoons light brown sugar 2 teaspoons dry mustard 1 teaspoon onion powder 1/2 teaspoon kosher salt 1/4 teaspoon white pepper or freshly ground black pepper 1 pound boneless, skinless chicken breast Combine brown sugar, dry mustard, onion powder, salt, and pepper in a small bowl. Coat both sides of chicken with the rub up to 30 minutes before grilling or broiling. Preheat grill to medium-high or position a rack in upper third of oven and preheat broiler. Oil the grill rack. Grill the chicken, turning once, until an instant-read thermometer inserted into the thickest part registers 165 degrees F, 4-8 minutes per side. Spicy Turkey Burger and Pickled Onions (Serves 4) 1 cup red-wine vinegar 2 tablespoons packed brown sugar 1/2 teaspoon salt 1/4 teaspoon ground allspice 1 small red onion, halved and very thinly sliced 1 pound 93%-lean ground turkey 2 tablespoons chopped fresh cilantro 1 1/2teaspoons ground cumin 1/2 teaspoon ground chipotle pepper 1/2 teaspoon salt 1/8teaspoon ground allspice 1 teaspoon canola oil 4 whole-wheat buns, split 8 teaspoons reduced-fat mayonnaise, divided To prepare pickled onions: Whisk vinegar, brown sugar, salt and allspice in a medium glass bowl. Microwave on High until the mixture boils, 2 to 3 minutes. (Alternatively, bring the mixture to a boil in a small saucepan on the stove.) Add onions and toss to coat. To prepare burgers: Preheat grill to high. Place turkey in a medium bowl and gently mix in cilantro, cumin, ground chipotle, salt and allspice until distributed throughout the meat. Form the mixture into 4 patties. Brush with oil. Grill the burgers until cooked through and no longer pink in the center, 3 to 4 minutes per side. Toast buns on the grill, if desired. Drain the onions, discarding the marinade. Spread 2 teaspoons mayonnaise on each bun; top with a burger and pickled onions.
