Question: My problem is that my cheese starts to burn before my crust is brown. I have my oven set at 475° and use a pan with small holes in it. What can I do? Answer: I would first suggest placing about one third of your cheese between the middle layers of your pizza. Place the remaining two thirds of cheese on top of your pizza. Reduce the temperature of your oven from 475° to 400°. I also prefer to par-bake pizza crust approximately 5 minutes before adding toppings.
