The joy and use of herbs
Lynne Rosetto Kasper
Question: Are there some easy ways of adding new tastes to my everyday cooking?Answer: Yes... collect some traditional, ready-made ethnic sauces. Use them as rubs, marinades, or finishing touches in the dishes you cook all the time. For example: • Use Thai curry pastes for marinating and for anything you cook in liquid - like braised green beans • Rub Chinese Five Spice Powder (fennel, anise, ginger, cinnamon, and clove) into spareribs or shrimp before cooking. • Mexico's Chipotle Peppers in Adobo Sauce brings a plush-tasting smoky heat to mashed potatoes and stews. • Sauce seafood or replace mayonnaise on cold turkey sandwiches with a blend of French black olive spread (called tapenade), minced onion, and lemon.
